Happy St. Patty’s Day! It’s been quite awhile since I’ve posted due to an unfortunate illness and for that, I apologize. Nonetheless, I hope my attempt at being festive outweighs my temporary absence. This potato candy is a great recipe to make with the kids and looks just potatoes! With cream cheese, coconut, vanilla, and cinnamon this candy is sure to be a crowd pleaser.
You Will Need:
- 1/4 Cup butter, softened
- 8 oz cream cheese
- 4 Cups confectioners sugar
- 2 1/2 Cups flaked coconut
- 1 tbsp ground cinnamon
Directions:
- In a medium bowl, beat the butter and cream cheese together until smooth. Add the vanilla and confectioners’ sugar; beat until smooth. Using your hands if necessary, mix in the coconut. Roll into balls or potato shapes, and roll in the cinnamon. Place onto a cookie sheet and chill to set. If desired, roll potatoes in cinnamon again for darker color.
